Edamame Succotash Salad

1 cup                     Soy beans (Humphrey County) lightly blanched

1 cup                     Sweet Corn (Sunflower County)

2                              tomatoes thinly sliced

1 cup                     yellow squash

1 cup                     shredded lettuce

2 oz                        fresh Basil          

2                              thick slices of sour dough

2 oz                        Extra Virgin Olive Oil

2 oz                        goat cheese

TT                           Salt and Pepper

 

·         To make Croutons season bread with salt, pepper and olive oil bake at 350 for 15 to 20 mins

·         To make the salad place crouton on a plate then top with shredded lettuce

·         Then add the Corn, Soy beans, tomatoes and squash

·         To finish add fresh basil and goat cheese drizzle with olive oil and season with salt and pepper
