Stuffed Jalapenos

Crab Stuffed Jalapenos

12 large jalapenos
2 cans  white crab meat
4 oz cream cheese
2-3 green onions, chopped, tops and bottoms
1 tsp Old Bay Seasoning, more to taste, if desired

Lay jalapenos flat, cut off one section, making a boat.  Scoop out seeds and pith.  Mix other ingredients, then stuff the jalapenos.  Place on grill pan on high heat til bottoms of the peppers blister.  Finish in the oven under the broiler until crab mixture turns a light golden brown.



Sausage Stuffed Jalapenos

12 jalapenos
1 pound cooked sausage, crumbled
4 oz cream cheese
2 tbsp. dark brown sugar
Bacon

Make jalapeno "boats", slicing off top of one side, mix other ingredients and stuff the peppers.  Wrap with bacon, secure with toothpick, and broil til bacon is crisp.
