FARMER'S BREAKFAST

FARMER'S BREAKFAST   I am figuring this breakfast for about 4 to 5 people...you can figure about 1-2 strips of bacon per person and about 1-2 large potatoes per person when you make it...adjust everything else according to your own preferences.   6 Large Baking Potatoes, baked until just about done, cool completely, or refrigerate overnight is best- cut into cubes 1 Large Onion, chopped 8 strips raw bacon, cut into 1 inch pieces   Heat your large skillet to high heat, when it is hot, add bacon, stir for about 1 to 2 minutes, it will not be completely cooked, but the fat will begin to melt, add cubed cold potatoes and onion, stir well so bacon is mixed into mixture, turn heat to medium high, season with Morton's "Nature's Seasoning" [available in the spice aisle] or use salt and pepper.  Do not "over-stir", but using a spatula, lift potatoes and watch for them to begin to brown, then turn them over and brown, stirring gently.  You can add any vegetables that you like...green peppers work great, or zucchini, or whatever sounds good to you...you can even spice them up with jalepeno's if you like!   When the potatoes are brown and the bacon is "cooked", you can add some shredded cheese to the top, cover and melt over low heat.  I fry some eggs until "over easy" or however you like, and place on top of the farmer's breakfast OR you can scramble eggs and pour over the top, using your spatula to move potatoes around to get the eggs into the potatoes, cover and cook over low heat until done, then add some shredded cheese to the top.  I like mine with sour cream, my husband likes his with ketchup, you can use hot sauce or nothing!   Serve with some toast, english muffins or even coffee cake or blueberry muffins! YUMMY!  ENJOY!
