

File Seafood Gumbo
Serves 12
2 Tb Vegetable Oil
2 cups Yellow Onion, chopped
1 cup Bell Pepper, chopped
1 Tb Garlic, chopped
3 Tb Tomato Paste
10 cups Seafood Stock or Water
1 cup Tony Chachere's Instant Roux Mix
2 cups Peeled Shrimp
4 Talapia or catfish Fillets, large cubed
1 cup Crawfish Tails
1 cup Crabmeat
Tony Chachere's Creole Seasoning, to taste
1 Lemon, juiced
1 Tb File
½ cup Green Onion, chopped
6 cups Cooked Rice
In a large soup pot, heat oil and sauté the onion, pepper, garlic, and tomato paste for three minutes. Add stock and roux mix. Stir to combine and keep stirring intermittently until comes to a simmer. Add shrimp, fish, crab, and crawfish. Season with Creole seasoning; continue to cook 30 minutes. Before serving, season again with Creole Seasoning if necessary, add lemon juiced and green onion. Serve over rice.
