

Tomato Pie
1 8-9 in deep dish frozen pie shell
2 large ripe tomatoes, maybe one more
2 cups shredded mozzarella cheese
10-12 fresh basil leaves, stacked, rolled, and cut into thin ribbons
Olive oil
Salt and fresh cracked black pepper to taste
Thaw pie shell. Beginning with tomato slices, layer tomatoes, cheese, basil, and some pepper. Finish pie with mostly tomatoes on top with sprinkling of cheese. Drizzle very lightly with olive oil, salt and pepper on top layer to taste.
Bake in 400 degree oven 20-25 minutes, until edges of pie crust are very brown. Serve hot or at room temperature. Makes a great appetizer or side dish.
