Mini Cornmeal Muffins
2 cups self rising corn meal mix
1 1/3 cups buttermilk
½ stick butter, melted
Mix all ingredients well, and put in mini muffin pans, usually a 24 count that has a no-stick coating. (Find these pans at the big box stores.)
Bake at 450 degrees until golden brown, 15-20 minutes, depending on your oven.
Serve with butter and orange marmalade—the sweetness of choice—so good for any meal you prepare, breakfast to supper!
