Matt's Clams And Spaghetti

Matt's Clams and Spaghetti

Cut one pound bacon into 1 inch pieces and fry until medium done.  
Add 1 very large chopped onion, and 2-3 ribs celery, diced fine.

Add 1 pound fresh, sliced button mushrooms and cook over medium low heat about 30 minutes until onions are clear.

Add 2 cans (or more) drained, chopped clams, stir until hot.  Add 2 pints sour cream and heat through.  

Season with salt and pepper to taste with a pinch of oregano

Cook 1 pound spaghetti, drain, and stir in one stick butter until melted.

Serve clam mixture over spaghetti, garnish with fresh shaved parmesan cheese and chopped fresh parsley—curly or flat leaf.

Serves 4 people generously!.  Do a great green salad and serve really crusty bread.
