

Beverly's Easy Quiche
(makes two 9-inch pies)
2 shallow 9 inch ready made pie shells
6 eggs
1 cup heavy cream
1 12oz package bacon, cooked crisp and crumbled
½ large white onion chopped
8 oz fresh button mushrooms, sliced
1 stick butter
Roma tomatoes, 2-3, sliced
1 ½ Swiss cheese
2 cups mozzarella cheese
Divide bacon into pie shells, then top with slices of roma tomato.. Split Swiss cheese between the two pies. Sauté onion and mushrooms in butter until onion is translucent, then top each pie.
Salt and pepper. Wisk cream and eggs together, and pour over pies. Top with mozzarella, place pies on cookie sheet, and put into 375 degree preheated oven for at least 30 minutes, or until knife inserted into center comes out clean. Allow to rest 5 to 10 minutes before serving.
