

Edith's Spicy Carrot Cake
2 cups regular flour
2 cups sugar
2 tsp. soda
2 tsp. cinnamon
1 tsp. salt
1 ½ cups salad/canola oil
3 cups grated carrots
4 eggs
Combine dry ingredients and mix well. Add eggs and oil and mix well. Add carrots and beat on medium speed with electric mixer for about 2 minutes. Grease and flour a 10 inch bundt pan. Pour in batter and bake @ 350 degrees for 1 hour, 10 minutes. Let cake rest before turning out.
