

Broccoli Cornbread
2 boxes Jiffy corn muffin mix
1 stick butter
4 eggs, beaten together
1 16 oz. container of cottage cheese
1 cup fresh broccoli florets or 1 box frozen, thawed and well drained
½ cup shredded cheddar cheese
Melt butter in a glass baking dish 9x12 or 8x8
Mix all other ingredients together and pour into baking dish-bake at 350 to 400 degrees until done
