BROCCOLI CHEESE SOUP 1 Stick Butter 1 LARGE sweet onion or 2 medium, diced Two 8oz packages fresh mushrooms, diced Heat butter in a stock pan and add onions and cook until transparent, about 3 to 5 minutes, add diced mushrooms, cook over medium heat until mushrooms are cooked through and beginning to thicken with onions [be careful NOT to burn!] Add: 1/4 Cup Flour Stir constantly for 2 minutes. Add: 2 cups chicken broth add: 3 Knorr Chicken Cubes [available at wal-mart] Add: 1/2 tsp. black pepper Add: 1 tsp. salt Add: 1/4 teaspoon cayenne pepper [crushed red pepper] Stir for 2 minutes. Add: 4 cups milk Stir for 2 minutes, scraping bottom of pan Add: 20 oz. cooked broccoli, I used cuts and tops Add: 8 oz. Velveeta Cheese, cubed Stir well until cheese is melted, using medium low heat. Remove from heat: taste and adjust seasonings.
